Blueberry Almond Breakfast Bites

Imagine if a scone and a muffin had a baby. Yup, they’re special. Plus - they’re gluten free and super healthy!

Ingredients:

  • 2 cups organic almond flour

  • 3 organic eggs

  • 1/2 tsp baking soda

  • 1 Tbsp apple cider vinegar or lemon juice

  • 2 Tbsp coconut oil

  • 1 tsp vanilla extract

  • 1 cup organic blueberries

Directions

  • Preheat oven to 350F

  • Blend all ingredients (besides the berries) until creamy

  • Mix in berries by hand

  • Scoop batter onto an oiled baking dish

  • Bake for 20-25 minutes

  • Cool and enjoy
