Blueberry Almond Breakfast Bites
Imagine if a scone and a muffin had a baby. Yup, they’re special. Plus - they’re gluten free and super healthy!
Ingredients:
2 cups organic almond flour
3 organic eggs
1/2 tsp baking soda
1 Tbsp apple cider vinegar or lemon juice
2 Tbsp coconut oil
1 tsp vanilla extract
1 cup organic blueberries
Directions
Preheat oven to 350F
Blend all ingredients (besides the berries) until creamy
Mix in berries by hand
Scoop batter onto an oiled baking dish
Bake for 20-25 minutes
Cool and enjoy
