Keto Blueberry Jam

Honestly, if PB and Jelly had a battle, I am a ride or die PB girl. Nut butter is my love language. However, there are a few situations where the jam creates the epic flavor of a dish- like in my grain-free breakfast cereal.

This jam was super easy to make from some ingredients I had around the house. Chia seeds are used to create the thickness with fresh lemon juice as the preservative. You can slightly change the flavor by adjusting the amount of low-carb sweetener and choosing fresh vs. cooked berries.

Ingredients:

  • 2 cups of fresh or frozen berries

  • 2 large lemons

  • 2 tablespoons chia seeds

  • 2 tablespoons filtered water

  • 1 tablespoon Monk Fruit sweetener


Instructions:

  • Combine all of the ingredients in a blender and pulse until the berries are at the desired consistency

  • Add the mixture to a large sauce pan and heat on medium heat until strongly simmering

  • Reduce to a medium simmer and cook uncovered for 15 minutes

  • Pour into a clean glass jar and refrigerate

  • Enjoy within 2 weeks
