Vegan 'Cheezy' Broccoli

Okay vegans - have you tried nutritional yeast?! Even if you don't eat cheese, you can't deny the deliciousness and satisfaction of that rich cheesy flavor. If you're lactose intolerant like me, the pain and agony is not worth the indulgence. That's where nutritional yeast comes in - it is enriched with B-vitamins and adds a deep flavor to your meals. I am officially obsessed. 

This recipe is sure to satisfy your taste buds and fight inflammation. Broccoli has never tasted so good! 

Ingredients: 
2 large heads of broccoli
3 tablespoons your favorite oil (I used avocado) 
1/2 cup almonds
4 cloves of garlic
1 cup nutritional yeast (or more!) 
1 tablespoon rice vinegar
Salt and pepper to taste
Optional: 1/2 teaspoon of coconut sugar

Instructions: 
1. Preheat oven to 400F
2. Separate the stems from the heads of the broccoli. Cup the stems into small pieces and toss with oil, garlic, salt and pepper. Bake the stems until lightly browned. Remove and set to the side. 
3. Lightly sauté the broccoli tops with in oil for 5 minutes.
4. Add the almonds, nutritional yeast & coconut sugar (optional) and cook for 5-10 more minutes until fragrant. 
5. Lightly dress the stems in rice vinegar and combine with the tops. 
6. Top with more nutritional yeast
