Middle Eastern Shakshuka

Cook time: 30 minutes

Serves: 6

Although this recipe is traditionally eaten as breakfast, the rich flavors are perfect to be enjoyed for lunch or dinner!

Ingredients:

- High heat cooking oil (I use ghee)
- 1 whole yellow onion
- 1 large green pepper
- 5 cloves of garlic
- 3/4 cup tomato sauce
- 5 large ripe tomatoes
- 6 large eggs
- ground coriander
- paprika
- ground cumin
- fresh parsley
- fresh mint
- salt and pepper to taste

Directions:

1. Heat diced onions, green pepper and garlic with oil in a large cast iron skillet until soft and fragrant
2. Add diced tomatoes and tomato sauce, simmering for 10-15 minutes. Add seasonings to taste.
3. Create 6 little pockets and crack and egg in each pocket.
4. Reduce heat, cover skillet, and cook on low until the egg whites are cooked.
5. Uncover and add diced fresh mint and parsley
6. Serve alone or with your favorite bread
