Almond Kale Salad

Who doesn’t love almond butter?! If you don’t, this recipe is not for you. If you are just as obsessed as I am, say hello to your new favorite salad. This recipe was adopted from one of my favorite places on earth, People’s Organic Co-Op. This salad is healthy, hearty, and nutrient dense - what else could you want from a salad?

Prep: 10 minutes

Preparation: 10 minutes

Serves: 2 (or 1 if you’re like me and eat the whole thing)

Ingredients:

Salad

  • 1 large bunch organic kale - sliced thin

  • 2 ripe organic avocados - cubed

  • 1 large stalk of celery - sliced thin

  • 4-5 Scallions - sliced thin

  • 1/2 cup organic almonds - chopped or whole

Dressing

  • 1 cup almond butter

  • 1/4 cup apple cider vinegar

  • 1/4 cup coconut amigos or gluten free tamari

Instructions: Blend the dressing and add to the chopped veggies. Toss and enjoy!
