Nutrient Dense Italian Meatballs

You may have thought to yourself upon reading the title, “what’s so nutrient rich about meatballs?”

The key is to add the most nutrient dense food on the planet - LIVER

YUP, you read that right. when looking at gram per gram, there’s NO FOOD that can match the nutrient profile of liver and organ meat. With that being said, as with all animal products, it is critical to focus on grass-fed and organic sources as you can trust that they will be higher in nutrients and lower in toxins, like pesticides.

Liver is a rich source of choline, folate, iron, vitamin A, vitamin K2, and B-vitamins. It’s seriously like a multivitamin!

If you’re like me, the sound of eating liver doesn’t sound extremely appetizing…. even a lil’ bit creepy…. but these meatballs are so rich in flavor from fresh herbs and spices that your tummy and taste buds will be very satisfied!

Ingredients

  • 1 pound ground beef

  • 1/4 pound beef liver

  • 1 large egg (or 2 medium eggs)

  • 1 tablespoon onion powder

  • 1 tablespoon garlic powder

  • 1/2 cup diced onion

  • 1/4 cup fresh herbs (I love parsley, basil, and oregano)

  • 1 teaspoon salt

  • 1.5 teaspoons ground black pepper

  • 1 teaspoon coconut aminos

Directions

  • Preheat oven to 375 degrees

  • Combine all ingredients and form into desired meatball size/shape

  • Bake until cooked all the way through (plus or minus 30 minutes depending on size)

  • Enjoy over zucchini noodles (zoodles), spaghetti squash, or pasta of choice
