Homemade Coconut Milk

In honor of my love and admiration of coconuts, I’m sharing my super simple & delicious coconut milk recipe

Ingredients

  • Dried organic coconut flakes

  • Filtered water

  • Organic vanilla extract

  • Pinch of Real Sea Salt

  • Optional: dates for sweetness or cacao for chocolate milk

Directions

  • Add coconut and filtered water in a 1:4 ratio to your blender (I use 1 cup of coconut flakes to 4 cups of water but you can make as much as you want)

  • Add 1 tablespoon of vanilla extract and any extras

  • Blend for 60 seconds and strain with a fine strainer or cheese cloth

  • Store in a glass jar and use within 4 days

  • PS. Save the creamy goodness on top to add to smoothies, soups and curries

My favorite way to use this dairy free milk is in coffee or smoothies but the possibilities are endless!
