Dairy Free Coconut Pesto

I love pesto but my body does not enjoy pine nuts or parmesan cheese. This recipe was inspired by my favorite nut - coconut - and my love for pumpkin seeds. The result was fresh, tropical, and delicious! Enjoy!

Ingredients

  • 2 cups organic basil

  • 1/2 cup organic cilantro

  • 3 cloves garlic

  • 1/4 cup organic pumpkin seeds

  • 1/2 cup organic dried coconut flakes

  • 1/2 cup organic extra virgin olive oil

  • 1/2 tsp salt

  • 1/2 cup filtered water

  • Optional: Squeeze of lime or lemon

Directions

  • Place all ingredients into a blender or food processor and pulse until you reach your desired consistency
