Dairy Free Coconut Pesto
I love pesto but my body does not enjoy pine nuts or parmesan cheese. This recipe was inspired by my favorite nut - coconut - and my love for pumpkin seeds. The result was fresh, tropical, and delicious! Enjoy!
Ingredients
2 cups organic basil
1/2 cup organic cilantro
3 cloves garlic
1/4 cup organic pumpkin seeds
1/2 cup organic dried coconut flakes
1/2 cup organic extra virgin olive oil
1/2 tsp salt
1/2 cup filtered water
Optional: Squeeze of lime or lemon
Directions
Place all ingredients into a blender or food processor and pulse until you reach your desired consistency
