Coconut Raspberry Bars

Ingredients

  • 1 cup organic coconut oil

  • 1 cup organic coconut butter (also called manna)

  • 1 tablespoon vanilla extract

  • 1/2 cup organic raspberries (mushed)

  • Splash of fresh lemon juice

  • Sprinkle of celtic sea salt

  • Optional: sweetener (1/2 tsp stevia, honey, etc.)

Instructions

  1. Melt & mix the coconut oil and coconut butter over low heat (option: add sweetener)

  2. Remove from heat and place in individual molds or on a non-stick container

  3. Add vanilla extract, lemon juice, salt and berries - mix

  4. Place in the refrigerator for 1 hour until hardened
